With the iPod touch connected to iTunes you will see it in the device section on the left hand side of the iTunes window.

Click on the iPod touch and then select "Apps" which is to the right of "Summary" near the top of the window.

Once you have selected "Apps" scroll down you will see a heading called "File Sharing" and there will be a list of applications that can transfer files to your iPod touch through USB.

Select Stanza and on the right hand side of the window will be an "Add" button, click this button then navigate to where your files are stored on your computer and iTunes will add these books to your iPod touch for use in Stanza.

This list will contain all other apps that can do the same thing with whatever media they are meant to handle.
