Different devices sync as you wish - that is, sync settings appear under each device as it is connected. I have an iPhone, an iPad, an iPod Touch and an old iPod Photo. I sync with each what I want to sync (and because I'm lazy and try to sync everything, some apps give me a pop-up saying they're not going to be loaded on, for instance, the iPod Touch, because they're not compatible with it).
