You have two choices. One is to open Calibre and plugin your iTouch. It can take a couple of minutes, but iTunes will open and Calibre should recognize your iTouch. If it doesn't, then click on "connect share icon" and choose connect to iTunes. After a minute or so, you will get two new icons next to your Calibre library icon. One will be send to device.

The other way is through stanza. You will first need to use ipconf on your computer to get the address of your computer. Then go to Calibre "preferences", "sharing over the net" and follow the instructions on that page to set up the calibre server. Then go back to stanza on your iTouch and set up a new entry under "shared" for your ip address to Calibre.
