The iDevice end still has their own iPod dock connector but they've standardised on USB and USB charging now. They dropped the Firewire comms and charging support long ago. That said, iDevices are very picky about the charger itself. If the data lines aren't at the correct voltages to signify that it is a USB charger and capable of supplying X amount of current then it will refuse to charge. You can't just give it 5V on the power lines.

The sync/charge cables from Apple are just regular cables but some of their other cables like the newer component video output cables have a special authentication chip built into them. If the newer iDevices which support video output don't detect that chip then they won't enable the output. That is all the chip is there for. It doesn't do any conversion or processing of the video signal.
