Unfortunately sub-collections or collections within collections are not available on the Kindle.

Collections as I understand are not physical folders on the Kindle but are basically like tags or labels which are applied to your books. The bonus is that you can have one book in multiple collections whereas if you were really using a folder system, that book would have to have more than one physical copy to belong in more than one folder.
