I have done this for the PRS-505 in my
Change Language with firmware v.1.4.0.23260 and modified PRS+ post.
The asset file should at least serve as base.

Also the 350/650 firmwares contain spanish language asset-files. [/Edit]
@Kartu: As you use SONY-language-assets with the 300/600 you may eventually consider this also for the forthcoming 505-version.
