It's more complicated than that. In addition to being able to run a remote X session, as Inigo says, the application that you're running has to have the intelligence in it to work with the eInk screen correctly. I could be wrong, but I don't think a generic X application will have that by default. It would need to know when and how to do refreshes, etc.
Certainly not impossible, but more work than just getting a connection setup. I believe there have been other discussion about this issue in the past that we can search for to get some more details on what else needs to be done to make it work.
