I don't use Gnome, but I believe there is a setting to enable/disable animations, or choose their level of amazing awesomeness. Try disabling all, that should reenable metacity.
Hotkeys should be available somehow, no matter the window manager (but the method to describe/enable them might be different.) Worst case, there's always xbindkeys.
