This should be easy since I'm not a big reader. There are many well known fantasy books I have not read yet.
Other fantasy books I've enjoyed: The Dark Elf Trilogy, A Game of Thrones, Dragonlance series.

It isn't exactly a fantasy, but a book called
Dune by Frank Herbert is quite good. It's science fiction but there's quite a bit of overlap in the genres, especially evident with this book, and I thought it was a good read.
