Welcome to MobileRead, featsfanbob! And congrats on your new toy.

There isn't really a way to edit an LRF file directly, but there are a couple of things that let you edit the items you're asking about (usually referred to as "meta-data" with or without a hyphen).

One is libprs500, but it's still being updated for the 505, and it doesn't really change the meta-data on the actual file, but rather adjusts what the Reader sees when the file is loaded.

Another is EditLRFMeta, which does actually change the meta-data in the file for you. There's a GUI overlay available for it too, called something like "editlrfmetagui," but I'll let you google that one yourself.

Look around the place and make yourself t'home, there's a gold mine of good info here for you, and it's growing daily.
