There are two things - jailbreaking and unlocking. Jailbreaking lets you install third-party apps unavailable in iTunes store, like MyWi. Unlocking requires jailbreaking, but it's separate. You can jailbreak your phone and still be locked to your operator. Out of two, jailbreaking is less intrusive and can be easily removed with Restore option in iTunes.
