Problem solved, but for anyone else who might have this problem, the solution is simple:
Use the computer to which the iPad is synced.
Duh.
Was using my own PC, since that's the computer I scanned the pages to. Took the files to her comp, and just synced after dragging the files to iTunes/Books. Probably could have dragged them, but was only trying to do that to avoid syncing all my stuff onto her iPad.
