You can "fake" a variety of white-on-black on the iPad in iBooks by taking advantage of the triple-Home-button-press option as available in the Settings, which reverses the colours of your screen universally (it looks weird when looking at your Home screen, but quite effective and as desired when mid-iBooks

).
