Well you could certainly buy from those DRM-free ebooksellers (baen books is the best IMHO). IIRC fictionwise has a Kindle section.
I honestly feel IF Amazon did go bust, the remaining assets would get sold, some publisher/ebookstore would buy the rights to mobi and start selling ebooks in that format. The size of the Kindle market would be too great to ignore.
