Just had a quick look through the 1.4 firmware (SD card image) looking for the quotes.
I unpacked the firmware upgrade file. Among other stuff, it contains two large files:
- files/eb600em/fs.tgz (39 MB) Looks like the new filesystem
- files/books/drm_book.tgz (77 MB) Definitely the book database
Unpacking fs.tgz we find the quotation strings in the shared library usr/local/Kobo/libnickel.so.1.0.0.

You will need to compile the firmware from source to change the quotes
(or be very handy with a binary editor). The binary package doesn't contain a database or text file that can be easily replaced.
