Well that is probably based on culture and likeness. It is a lot easier to identify with animals of your own size or close to your own genome, intelligence or whatever.

The strange thing about that is that we slaughter and eat pigs despite their obvious intelligence and likeness to ourselves.

But actually Jonathan Safran Foer has a very good debate about this subject in his book "Eating Animals" (chapter 2 or something if I recall correctly).
