When in Spain we had octopus. It was exceptional. Very tender. And that was the only time. I have never had it as good as that one time.
Perhaps alligator is the same and it must be cooked slowly?
I've stopped cooking squid as my wife is squeamish. But squid cooked slowly in crushed tomato and spices is very good. And squid, unlike octopus, is easy to get.
I also add smoked peppers to give it a special flavor. Or I used to.
The more I think of it, the more I want it again. It was simple to make. Maybe this weekend.
Ea might want wont to try some of the milder smoked peppers. Or it may be a cultural thing, just as Lutefisk is a little less popular where I live, (excluding Minnesota).
