I cook it all in the convection oven on cookie sheets lined with parchment paper.
Then freeze it in plastic containers with wax paper between layers.
That way we're not stuck with opened bacon packages in the fridge that spoil.
Need bacon for a club sandwich? Open the container, take the number of strips required and thaw in the microwave. Voilą!
It's the perfect way to take advantage of bacon sales without eating it at every meal... Of course there are those who would do that...
