@kamn,
The nook already has a built-in dictionary. Or did you mean you were unsatisfied with the current one and wanted something better? I've only had to look up very few words, so far, and found them, but some people are apparently not happy with it.
I'm surprised people want more font sizes. With v1.4, the nook already has, what, seven? How many more tiny, incremental sizes could you want? Seven is surely more than enough.

Cover flow would be nice, but definitely not necessary if it slows other good things from happening!

I wholeheartedly agree with these. Cover Flow would be nice, but I'm guessing B&N won't do it. They probably feel they have to distinguish their own ebooks somehow, and this is one way that users might be tempted to consider B&N over rival stores (assuming price and other factors are equal, of course).
The current method for displaying books by author (last) name and then alphabetical order is very limited. I want more control over how the books should be sorted (whether Author, Title, Date, Genre or whatever), and, related to that, I want it to actually recognise and sort depending on the tags.
I hate that I have to name my series by adding "#1", "#2" in front of the name. I don't have to do that in my MP3 player, why should I do that with my nook? That's what metadata is for. Recognise that Book X is the third of four books in a series, and list it accordingly.
I think if they do that, then support for browsing folders becomes a non-issue for me. In essence, I want my ebooks to be organised the way my music is: Artists (Authors) / Albums (Series) / Tracks (Books), with the relevant metadata recognised for when I want to search by genre or even date. (Currently, only books in My B&N Library are sorted by the date added.)
