They tell you in the first paragraph you cite exactly how they do it. It sounds like they're good at what they do. If I were you, I'd keep using them. You should, however, learn how to take the InDesign files and spit out other formats. You might also offer the readhowyouwant people the InDesign files if they'll give you a cheaper rate.
Frankly, they look smart, and you want to let smart people do what they do. Especially when it's to your advantage.
