If you look at the demo the person isn't randomly pecking at the screen. He actually has the QWERTY board layout memorized and is pecking as he is typing on a screen. I also figure they are using the gyro to predict the device orientation.
There are a lot of predictive text keyboards out there, which is why I like the virtual keyboards so much. And they are getting better and better at predicting what one is trying to say. There is one out there today (
Swiftkey) that predicts sentences as you start typing.
