2 steps if I remember correctly.

1) change the default in preferences.

Calibre stores the conversion settings you used "Per Book Format"

2)When you click convert book,the next screen has a button down at the bottom near the left sidebar "Restore Defaults" (to use preferences)
or you can make the change , for this book on this screen.

If you do a Bulk conversion, there is a Tick box (ticked by default) that says use the settings already saved.
Un-tick , make additional changes on this screen as desired.
