Go to your Control Panel (User CP) -> Edit Options -> Messaging & Notification -> Private Messaging => Check the box next to "Save a copy of sent messages in my Sent Items folder by default"

And why isn't is the default?

I ended up spending some time composing a message to someone and sending it, but then check my sent items to to I didn't send it... what the?

You're right - saving sent items should be on by default - which is from now on the case for every newly registered member.
