When I try to converse french books on mobi format to read on my Kindle Fire, how can I keep the é,à,ê,ç...

Make sure that the encoding of the original document is set properly.

The TXT file seems to be correct but the MOBI format doesn't show the french caracters

.txt files don't have any way of specifying the encoding. See if the tool you are using has a way to specify the encoding of the input file, and hope you get it right.

The easiest way to avoid character encoding issues is to create an .epub with Sigil. Simply open Sigil and copy and paste your text in Book View (WYSIWYG) mode into the default document (Section0001.xhtml). If the French accented characters are displayed correctly, press F8 to enter the name of the author and the book title also change the language from English to French.
(Optional: Highlight each heading and press CTRL+3. Then click the Generate TOC from headings button.)
Save the .epub file and open it with Kindle Previewer to generate a .mobi file.

Another tip is not to use French accented characters in any file names, even those that are inside the ePub file.
