Sorting collections

Is there a way to sort "Collections" on Kindles?

Yes, but it's a bit of a hack.

Prefix all your collection names with a character such as "_" (underscore) and then sort your books by title. You'll get all your collections listed first, in alphabetical order, followed by the book titles.

Will it sort the collections? I think the collections are listed at the beginning by default, but not in alphabetical order.

Yes, it will, but only if you sort by title. You need to add the "_" character to the collection name to make them sort before the individual book titles. Try it and see!
