How does a Smart Phone display electronic books?

In the real world I am a network administrator and as such I need to understand the technology and how it works. From what I understand a smart phone does not actually hold electronic books like stand alone readers do. From what I understand a smart phone leaves the book on the web server and downloads portions of the book as you read it. That's why in the upper right corner of my blackberry there is a little arrow that indicates network activity and it seems to go active each time I change pages on the smart phone book reader, its downloading the next page so that it can present it.

This depends on the app. The Kindle and B&N and MobiPocket and eReader apps do store the ebooks on the phone and should not need web access when reading.

I think the Kobo app is network-based, and so is the Google Reader (if there is one for BB).
