Featured Recipe: Raw Pad Thai

This asian-inspired dish is as healthy as it is delicious and it's simple to prepare. Your friends won't believe there is no pasta in this dish!

INGREDIENTS
2 zucchini, ends trimmed
2 carrots
1 head red cabbage, thinly sliced
1 red bell pepper, thinly sliced
1/2 cup bean sprouts
3/4 cup raw almond butter
2 oranges, juiced
2 tablespoons raw honey
1 tablespoon minced fresh ginger root
1 tablespoon soy sauce
1 tablespoon unpasteurized miso
1 clove garlic, minced
1/4 teaspoon cayenne pepper

Directions

1) To create zucchini noodles, slice the vegetables lengthwise then with a peeler, create long thin strands or “noodles.” Then place the peeled noodles on plates.
2) Slice carrots similar to the zucchini, so using a vegetable peeler, create long strips out of carrots.
3) In a large bowl, combine bean sprouts, red bell pepper, cabbage, and carrots.
4) In another bowl, whisk together the orange juice, almond butter, ginger, honey, miso, garlic, soy sauce and cayenne pepper.
5) Pour at least half of the sauce into the prepped cabbage mixture then toss to coat.
6) Top the ‘noodle’ with the mixture and remaining sauce, on each portion on the plates.

Servings Approximately: 4 | Prep Time: 30 Min | Ready In: 30 Min

Among the more popular recipes first featured on Valentine's blog are three maple syrup pies, an apricot-apple crisp with maple cream, caramel peachy-pear pandowdy, a honey & white peach pie, and her own Pennsylvania Dutch hot and sour soup.

Though this collection is a memoir in food of the Valentine family it could be the story of any first, second and third generation immigrant family.

From the book: "Most Pennsylvania Dutch families evolved from immigrants who were peasants in "the Old Country". They learned, out of necessity, to use everything they could to feed their families and they devised ways of preserving those things through the long, harsh winters. Pickling, preserving, smoking, canning were necessary to get a large family through the bitterly cold winter months. As I worked on this cookbook I was continually aware of how so much of the food that was part of family tradition was also making good use of commonly available food sources that were abundant and cheap. My Gram Werner used to say that the reason pigs were so valuable was because you could use every part of them except the squeak. In the cold hill country of Pennsylvania maple trees grew in such abundance, that maple syrup was a frequently used sweetener. Cows were kept for milk, cream, butter, cheese and sour cream. When I read these recipes now some seem so rich and loaded with calories but back then people needed those rich, calorie-laden foods to see them through long days in the fields or the factories or lumbering in the forests."

Enough of the history, what about the recipes? I've gathered 30 of the finest popcorn recipes from around the world for your snacking pleasure, and have tried to keep them free from artificial sweeteners, preservatives or other nasty additives wherever possible. I've specified 9 cups of popped corn for most recipes, as that gives 3 generous cups per serving - you can have as many or as few servings as you fancy, but keep an eye on the calories! For your convenience, I've also included nutritional data from the USDA for each recipe (that's the U.S. Department of Agriculture and not the United Square Dancers of America!)

My preference for both flavor and health reasons, is freshly air-popped popcorn - so I have used that kind for all of these recipes. Everything in this book can be made with kernels you have freshly popped, or if you are in a hurry (or feeling lazy!), then you can always use the plain store bought pre-popped variety - just make sure you check the packaging for artificial nasties!

Most of the ingredients for these recipes can be found at your local grocery store or deli, but if you get stuck, then the slightly more unusual ones can also be bought online via a link at the end of the book.
