Subject and Notes

I was wondering two things.

Firstly, eBooks in iBooks often have a 'subject'. When I create an ePub book with a 'subject' it doesn't show up, so I guess I'm creating the wrong thing. What SHOULD I be adding to the ePub (I mean at html/xml level) to get this to show up?

Secondly, is it possible to bring notes back from an ePub document into the original file? It would be ever so useful!
