Posting this here, just to keep Geoff happy (although it has dairy in it, so he can't actually eat it...)

Naan breads

I make 4 large naans with this - you could easily get 6 smaller ones from it

Preparation time - about 5 minutes
Sitting around time - about 2 hours
Cooking time - up to 12 mins for 4, 18 mins for 6

Ingredients
450g plain white flour
Just under 2 tsp dried yeast - a bit less if the kitchen is very warm
60 ml hand warm water
1/4 tsp sugar
1/2 tsp salt
Plain yoghurt
2 tablespoon oil (just plain sunflower or similar, not olive oil or flavoured...)
1-2 tsp dried coriander leaf (cilantro), or more
1-2 tsp chopped garlic (I use Lazy Garlic), or more

Method
Half hour before mixing the dough add the coriander leaf and garlic to the oil, and leave to sit at room temperature.
Put the warm water into a small bowl and dissolve the sugar in it. Add the yeast, and stir.
Weight the flour and put flour and salt into a mixing bowl
Add yeasty water and stir in
Stir in oil with coriander and garlic
Add enough yoghurt to make a slightly sticky dough
Knead until nice and elsatic (I use my food mixer for this - which takes about 3 mins, then finish it by hand)
Put in a warm bowl at least twice the height of the dough, cover bowl wth clingfilm or polythene bag, and leave to rise for 1 - 1 1/2 hours or so - it should be about double at the end of it.
Once risen, heat flat griddle until hot - if it's not non-stick, lightly oil it first. If it is, don't.
Also turn grill on high and put a grill pan near the heat (if you don't have a grill, or it's being used for something else, you can cook both sides in the griddle - it just takes longer)
Whilst everything is heating up, break the dough into 4-6 balls.
Cover one ball lightly with flour and roll/press out into a circle-ish of the size you want the naan
Put naan on griddle and cook for 2 minutes, or until it starts puffing
Transfer to grill pan to cook the top - this takes about 1 minute. Alternatively, flip it over and cook for another minute on the griddle
Once cooked, place on plate and cover with clean cloth
Repeat - if you use the griddle & grill method you can start the next naan cooking whilst the previous one is under the grill, which saves a bit of time

Here's DixieGals cornbread Casserole.....If you haven't tried it yet, you are in for a treat!

I managed a rather nice sort-of tikka masala taste with the sauce on the veggie curry, quite unintentionally - although without the smoked tandoor flavour. The dal I need was closer to a tadka dal, but without tomatoes

Student Sheperd's Pie (mainly for UK residents and those who don't like to cook)

1xBeef and Tomato Pot Noodle
1xPacket of Smash (Instant Mash)

Prepare pot noodle as per instructions on container
Prepare Smash as per instructions on packet

Layer Smash over top of pot noodle, microwave for 30 seconds. Et voila! Student Sheperd's Pie.

Also

Student Chili Con Carne

1xBeef and Tomato Pot Noodle
1xBaked Beans in Tomato Sauce
4xheaped spoonfuls of chill powder

Prepare pot noodle, empty into bowl, add beans, add chilli powder. Stir. Bingo! Student Chili Con Carne.

Oh how I yearn for my Student Days when everything was much simpler, and drunker

Dairy is replaceable, often the only thing that may cause some problem is egg.....(What dya mean, just to keep Geoff HAPPY!!)

DixieGal's Mother-in-Law's Chicken Paella
  1. Put a cut up chicken, diced bell pepper, diced onion, diced garlic, and a couple spoonfuls of olive oil into your biggest nonstick pot. Salt and pepper. Cover and cook on about medium heat until the chicken is cooked.
  2. Add 2 cups of rice.
  3. Add 2 cups of chicken broth and 2 cups of water.
  4. Turn heat to lowest possible setting. Stir it up, cover it, and leave it alone for 45 mins. If you take the lid off, you ruined it. It's supposed to get barely burned around the edges, so stop picking at it. Go read a book or something.
  5. After 45 mins, uncover and pour in a whole jar of green olives, brine and all.
  6. Stir in a large can of tomato sauce and a small can of tomato paste WITHOUT SCRAPING THE PAN SIDES AND BOTTOM.
  7. Re-cover it and go finish your book for another 15 mins.

Serve with hot garlic bread and salad.

Two of my quick'n'easy pasta recipes.

Ea's ravioli with shrimps and spinach

1 person

preparation time: 10-15 min. all included
Ingredients:

125 g fresh ravioli with cheese filling
100 g shrimps - small or large as you prefer
100 g spinach, preferably whole leaves, cut roughly
Garlic. Either a dash or two of dried, crushed garlic, or, if fresh, 1/2 clove, chopped.
Salt and pepper.
Optional:
Parmesan cheese, freshly shredded, and olive oil, for topping.

Amounts are guiding only. Adjust to what you prefer.

Preparation:
Thaw the shrimp and spinach if frozen. Chop spinach roughly. Boil water for cooking pasta, and heat up frying-pan for spinach and shrimps to medium-high. While the pasta is cooking (keep an eye on it, need only 3 min.), heat up a a little olive oil/butter/margerine on the pan, and add spinach and garlic. Turn over and heat up/cook the spinach and add shrimps. Turn down heat. Shrimps musn't cook on too high temperature, or they get a tough structure. Drain ravioli, and add to shrimps and spinach. Turn over to blend all well. Add a dash of pepper, and salt if needed.

Serve warm and fresh, topped with parmesan cheese and sprinkled with olive oil.

Ea's Lemon-and-olive oil marinated salmon with pasta

1 person

preparation time: marinating: 1-2 hours, cooking time: 10 min.

Ingredients:
One salmon fillet
1/2 - 1 Chili pepper, not too strong, and preferably red as it looks nicer than green
1 -1 1/2 sp. olive oil
1 -1 1/2 sp. lemon juice
Salt
100-125 g tagliolini pasta or spaghetti

Preparation:
Cut salmon fillet in bite sized pieces. Chop chili pepper finely. Mix oil, lemon juice, salt, and chili pepper, and marinate the salmon pieces in this mixture for at least 1 hour. Cook the spaghetti and drain the water. Add the marinated salmon to the spaghetti in the cooking pot and turn gently. If there's lots of marinade left over, you made too much - and don't add it, the fish is dead and can't swim anyway. The heat from the pasta will cook the salmon, and it should not need to be re-heated. When the salmon is cooked gently this way, it is particularly soft and creamy.
