If you haven't read the actually Icelandic Sagas, you shoud! I'm 1/2 way through Njal's Saga and it is really fun! Not exactly the modern novel, of course, but more fun than Beowulf.

Hi. You also might find this site of some use in finding a novel related to the Vikings. The site itself is an excellent source for historical fiction.
