Using Kindle format vs ePub format is like using a compiler vs winzip?

I just noticed that one could unpack a non DRM epub file with Winzip. Not so with a non DRM Kindle file. One would need a special program like KindleUnpack or Calibre to unpack a non DRM Kindle file.

Does it mean that when one is unpacking an ePub file, the files in it would be 100% identical with the original source files used by the author?

On the other hand, when one is extracting a kindle file, such file would need to be decompiled and therefore there is no guarantee that the source files we get would be 100% identical to the original source files used by the author?

ePub is, as you have noticed, just a zip file with a particular format for the content. It is identical with the original source for the ePub but of course the ePub itself may have been created automatically using a tool such as Atlantis word processor so the actual source might be a word file. Mobi files are compiled into a single file database.
