As has been mentioned several times, there is no provision to turn a Kindle completely off, so the most you can do on a flight is put it in sleep mode. Of course, the wireless should be turned off as well, especially on 3G models. If wireless is not turned off, Kindles will check for new books or updates every once and a while, even if it is asleep.
