Do you know the most interesting thing I've seen a Texan bbq (besides a duck bill platypus)? It was a deboned duck, stuffed inside a deboned chicken, stuffed inside a deboned turkey.

All of which was then stuffed inside a deboned ostrich, wrapped in a side of beef and barbecued for 8 hours.


P.S. Most people will roll their eyes at my story. Texans, on the other hand, will have 1 of 3 response:

1, I wonder what the platypus tasted like;
2, I tried that stuffed recipe and it didn't work;
3, Where did you have it? I thought it was my family's secret.

1. you have your stuffing order wrong. the chicken goes in the duck, the duck goes in the turkey and the turkey goes into the ostrich. Then wrap around the ribs.

2. It'll take 16 hours, not 8....

I have a couple of recipes for the Turducken and both state that the order of the duck and chicken is entirely dependent on the size of the respective birds (i.e. it doesn't matter).

Never seen an ostrich mentioned (that would make it an Osterducken, I guess) but that seems too big a step - I think you'ld need at least one intermediate between the turkey and the ostrich, say, a vulture
