Does this have any relevance?
Yes. Ebook formats have horrible support for tables, and they should not be used.

Ideally, you should use a fixed-format ebook; failing that, you can simply use images of what you want. Tables will break in weird and wonderful ways at weird and wonderful times.

You might be able to handle this with a float.

This is what I want. I just want to know if it's possible to increase the spacing:

Yes, just adding a CSS like this:

Code:
td + td { padding-left: 2em; }
(Look for a HTML+CSS tutorial on how exactly to add the CSS to your code.)

Well, I'm getting there. Is it possible to pin the left column items to the top, as opposed to centered? Also, how does the code look?

Yes, there is a way, see here: http://www.w3schools.com/tags/att_td_valign.asp

Also, using a table is likely to be quite unpredictable on real devices. The preview in the editor shows how a browser would render the code, but does NOT show interesting device quirks.
