Anyone here have experience enough with both AMOLED and capacitive multi-touch displays to give a comparison?

I have a capacitive multi-touch AMOLED display on my phone. They're not mutually-exclusive... AMOLED is a type of display, capacitive multi-touch is a layer that goes on front of the display. You can overlay any type of touch-panel over pretty much any type of display.
