The manual is helpful and being able to rename files/change extensions is definitely something that the user can be expected to know. Renaming files is more a function of your operating system and it's unfair to expect calibre developers to include a manual for how to use your operating system, too.

The purpose of the Calibre manual is to teach you how to use Calibre, not teach you how to use your computer. Changing the extension of a file is not a Calibre function; it's a rather elementary computer skill.
