Dealing with French accents in the OPF file

Hello
I'm having trouble validating my ePub due to French accents in the dc:subject elements, generating errors like:

The entity "Eacute" was referenced, but not declared.

I broadly understand that I need to "declare" these character entities in the XML, but I can't find anything online that specifically explains (in basic terms!) how best to do this for an OPF file.

Can anybody help?

Do not use entities, but write the characters themselves (É instead of É) and store the file with utf8 encoding.
