Featured Recipe: Raw Pad Thai

This asian-inspired dish is as healthy as it is delicious and it's simple to prepare. Your friends won't believe there is no pasta in this dish!

INGREDIENTS
2 zucchini, ends trimmed
2 carrots
1 head red cabbage, thinly sliced
1 red bell pepper, thinly sliced
1/2 cup bean sprouts
3/4 cup raw almond butter
2 oranges, juiced
2 tablespoons raw honey
1 tablespoon minced fresh ginger root
1 tablespoon soy sauce
1 tablespoon unpasteurized miso
1 clove garlic, minced
1/4 teaspoon cayenne pepper

Directions

1) To create zucchini noodles, slice the vegetables lengthwise then with a peeler, create long thin strands or “noodles.” Then place the peeled noodles on plates.
2) Slice carrots similar to the zucchini, so using a vegetable peeler, create long strips out of carrots.
3) In a large bowl, combine bean sprouts, red bell pepper, cabbage, and carrots.
4) In another bowl, whisk together the orange juice, almond butter, ginger, honey, miso, garlic, soy sauce and cayenne pepper.
5) Pour at least half of the sauce into the prepped cabbage mixture then toss to coat.
6) Top the ‘noodle’ with the mixture and remaining sauce, on each portion on the plates.

Servings Approximately: 4 | Prep Time: 30 Min | Ready In: 30 Min

And there are many more just like this (even better) inside!

Now the only thing left to do is scroll to the top and Buy this book instantly to read on your Kindle or Kindle app.

(Cookbook/Memoir - 67k words. NOW WITH INTERACTIVE TABLE OF CONTENTS. Please note: the Kindle version of this book contains all of the text and recipes that are in the print version but does not contain all of the family photographs. Please note, this is a FAMILY cookbook with recipes contributed by many people. No guarantees are made.) In this combination memoir and family cookbook blogger and novelist Kathleen Valentine combines 30 posts from her blog with nearly 400 recipes collected from family and friends. Growing up in a "mostly Pennsylvania Dutch" family she collected and recorded recipes from grandparents, great-grandparents, aunts, cousins, friends, etc. which were combined in the first Valentine Family & Friends Cookbook published in 1981.

This was expanded in the 1992 edition and now, in this third edition, nearly 400 recipes combine with essays recording memories of growing up in rural Pennsylvania and photographs from six generations. Essays topics include making sauerkraut and soltz (a German pickled meat loaf), toasting marshmallows and catching fireflies, the old-country Christmas traditions of making stollen and visits from Belsnickle, old world ghost stories, their grandmother's quilts, and more.

Traditional family recipes include schmarn, panhaas, moultasha, a variety of sausage recipes, hassenpfeffer, and liver dumplings, a wide variety of pickles and relishes, as well as keuchels (a type of fried dough), apple dumplings, and rhubarb crisps and pies. Contemporary recipes from the younger generations of the Valentine family expand the collection with everything from dips and cocktails to chowders, cakes and cookies. Among the more popular recipes first featured on Valentine's blog are three maple syrup pies, an apricot-apple crisp with maple cream, caramel peachy-pear pandowdy, a honey & white peach pie, and her own Pennsylvania Dutch hot and sour soup.

Though this collection is a memoir in food of the Valentine family it could be the story of any first, second and third generation immigrant family.

From the book: "Most Pennsylvania Dutch families evolved from immigrants who were peasants in "the Old Country". They learned, out of necessity, to use everything they could to feed their families and they devised ways of preserving those things through the long, harsh winters. Pickling, preserving, smoking, canning were necessary to get a large family through the bitterly cold winter months. As I worked on this cookbook I was continually aware of how so much of the food that was part of family tradition was also making good use of commonly available food sources that were abundant and cheap. My Gram Werner used to say that the reason pigs were so valuable was because you could use every part of them except the squeak. In the cold hill country of Pennsylvania maple trees grew in such abundance, that maple syrup was a frequently used sweetener. Cows were kept for milk, cream, butter, cheese and sour cream. When I read these recipes now some seem so rich and loaded with calories but back then people needed those rich, calorie-laden foods to see them through long days in the fields or the factories or lumbering in the forests."

30 Perfect Popcorn Recipes : How to Make Sweet & Savory Gourmet Popcorn at Home (The Green Gourmet) [Kindle Edition]
Lori Jane Stewart (Author)

http://www.amazon.com/30-Perfect-Pop..._154606011_f_2

Quote:
New from #1 Bestselling author Lori Jane Stewart!

Popcorn has probably been around longer than any other snack food on the planet. It has a rich history, dating back to before civilization and taking part in a multitude of events we celebrate every year. It's the most popular snack food around the world, and the second most popular snack in America (falling just behind potato chips). Popcorn can be found all over the country, at movie theaters, carnivals, and most people's kitchens or pantries.

It is a common misconception that popcorn is an unhealthy snack. The reason some people avoid popcorn is because they don't understand the real culprit! Behind its supposedly unhealthy status, are the seasonings and additives, often added to commercially packaged products to liven up the bland natural flavor and to lengthen it's shelf life. The popcorn itself is a wholegrain, and these can help prevent cancer and lower the risk of heart disease, while also supplying healthy nutrients that support our vision.

There are many different methods to create popcorn, but the basic principle stays the same. All you have to do is make the kernels hot enough to heat the moisture contained naturally inside, and turn that into steam. The steam creates pressure from inside the hard shell casing and before you know it, POP! - the kernel is turned inside out and is ready to be consumed. As long as you can generate heat and have some kernels on hand, you can make popcorn!

Enough of the history, what about the recipes? I've gathered 30 of the finest popcorn recipes from around the world for your snacking pleasure, and have tried to keep them free from artificial sweeteners, preservatives or other nasty additives wherever possible. I've specified 9 cups of popped corn for most recipes, as that gives 3 generous cups per serving - you can have as many or as few servings as you fancy, but keep an eye on the calories! For your convenience, I've also included nutritional data from the USDA for each recipe (that's the U.S. Department of Agriculture and not the United Square Dancers of America!)

My preference for both flavor and health reasons, is freshly air-popped popcorn - so I have used that kind for all of these recipes. Everything in this book can be made with kernels you have freshly popped, or if you are in a hurry (or feeling lazy!), then you can always use the plain store bought pre-popped variety - just make sure you check the packaging for artificial nasties!

Most of the ingredients for these recipes can be found at your local grocery store or deli, but if you get stuck, then the slightly more unusual ones can also be bought online via a link at the end of the book.

Enjoy preparing and sharing!

Lori

Vegan Indian Cooking: 140 Simple and Healthy Vegan Recipes [Kindle Edition]
Anupy Singla (Author)

http://www.amazon.com/Vegan-Indian-C...154606011_f_14

Quote:
This beautiful follow-up to Anupy Singla's widely praised first cookbook, the Indian Slow Cooker, is a unique guide to preparing favorite recipes from the Indian tradition using entirely vegan ingredients. Featuring more than 50 recipes, and illustrated with color photography throughout, these great recipes are all prepared in healthful versions that use vegan alternatives to rich cream, butter, and meat. The result is a terrific addition to the culinary resources of any cook interested in either vegan or Indian cuisine.

Singla--a mother of two, Indian emigre, and former TV news journalist--has a distinctive style and voice that brings alive her passion for easy, authentic Indian food. Some of these recipes were developed by her mother through the years, but many Singla developed herself, including fusion recipes that pull together diverse traditions from across the Indian subcontinent. She shows the busy, harried family that cooking healthy is simple and that cooking Indian is just a matter of understanding a few key spices.

As Singla sees it, acquiring and using the proper spices is the key to preparing her healthful recipes at home. Singla has recently brought to market her own line of traditional Indian spice trays (also known as a masala dabba), which is being sold by retail outlets like Williams-Sonoma. Vegan Indian Cooking builds off of Singla's vast expertise in simplifying and perfecting Indian spices and unique, custom spice blends, making delicious Indian cooking accessible to even the most hurried home chef.

In this book you will find colorful healthy dishes using simple ingredients and combining colorful healthy dishes using healthy ingredients and combine color texture and flavors. The dishes included in this book range for hot and spicy to delicate flavors using fish and vegetables.
One of the most important features of Chinese cooking is texture. Vegetables should remain crisp and rice and noodles should be treated like pasta and retain their bite after cooking. Ingredients such as bean curd are used for texture, even though have little flavor in themselves. Bamboo shoots and Chestnuts, are a common ingredient, are used only for texture.

The recipes in this book are great for entertaining; we love to make a buffet of Chinese dishes for family and friends. Enjoy Soups and Starters, Main dishes, Vegetables, Rice and noodles.
