Personally, I think higher resolution screens make all the difference in the world. I've used both and wouldn't call it a gimmick until you get to densities the eye cannot distinguish.

Are you supposed to make phone calls with that?

Not true. There's all the difference in the world between the 300+dpi of my iPad 3, and the 150-odd dpi of the older iPad 2. It makes a tremendous difference to the readability of the screen, especially for text, which the higher resolution makes it comfortable to read at a much smaller size.

It's not only the resolution.

We have two 7" devices. Both have the same resolution: 1024x600. The PPI of both devices are equal at 179. Yet, my device is a lot crisper and easier to read with a smaller sized font.
