Try Amelia Edwards' "A Thousand Miles Up the Nile", which is available in the MR library. Wonderful travelogue from the mid 19th century.

How about An Inland Voyage, by R. L. Stevenson? Tells the story of the author's canal trip through France.

For something more modern, you could try The Wench is Dead by Colin Dexter, where Inspector Morse investigates an 1859 murder on the Oxford Canal (based on a true 1839 case).

Three Men in a Boat (To Say Nothing of the Dog ), published in 1889, is a humorous account by Jerome K. Jerome of a boating holiday on the Thames between Kingston and Oxford. Not quite like the others, but I still enjoyed it.
