Metadata and reconversion

Ok, if I dump an ePub into Calibre and then download social metadata, it there any way to get that information back into the ePub file without converting it? If I get new cover art, it still shows the old cover art on my nook, if I don't convert.

Is converting going to reformat the book in any way?

In my experience it just replaces the cover art if you do an EPUB to EPUB conversion.

It doesn't affect the way it was formatted already.

I do this frequently to replace the cover with better images I have found on google instead of the ones downloaded.
