Screen: 9.7" E Ink Triton 800 x 600 color pixel touchscreen, 100 ppi (200dpi)
Is it 1600x1200 or 800x600?

It is 1600 x 1200 dpi and 800 x 600 ppi. A pixel is made up of 4 dots in a 2x2 array. There is 1 dot for each color and a clear dot that can be used to brighten or darken the color. JetBook is a bit misleading here. Follow the link on the wiki to the display technology page to read about this.
By the way there are subpixel sampling techniques that can improve the apparent resolution using the dots.
