I've made that mistake, too.
That's why I usually start off by duplicating the whole book record first (add an empty book, select it, then merge/keep in the other). If I accidentally merge/delete, I don't lose anything. If I do it right - with merge/keep - then I can play around with the new record without risk to the formats/metadata in the old record.
