Literary author Haruki Murakami has a kind of memoir about running, "What I Talk About When I Talk About Running." I haven't read it myself.

I think you might like "Bringing Out the Dead" by Joe Connelly. It's fiction but the author was an NYC EMT for many years.

Have you read any Oliver Sacks?
