Wenn du von OpenOffice zu epub willst, vielleicht klappts damit:

Ansonsten wirds interessant (OO -> HTML -> epub), wobei das von OO erzeugte HTML meist etwas knatschig ist.

PDF ist noch schlimmer. Das ist ein reines Printformat... Text(struktur) daraus zu extrahieren ist reine Glückssache. Kann klappen, aber muss nicht, Reflow/Calibre auf PDF ist damit nur eine Notlösung.
