Because the embedded dashes are, in fact, NOT the typographically correct ones. The German "Gedankenstrich" is what is "–" in HTML, while the dash in the ePub is a simple ASCII dash.

The cover serves different functions here, one is an overview and for this an image of the whole front page seems (to me) nicer. The other title image is not removed, it is still part of the produced e-book. If Die Zeit would offer the front page in a higher resolution (or if a conversion from the PDF could be achieved within the recipe) I would be all for using the higher resolution.
