To change font type and background, from within a book, tap on the center of the page to bring up the contextual menu, tap on "text", then tap on the background choices (default background Normal) to bring up the drop-down menu and scroll (sepia is the last one on the list). You have to tap on the menu and scroll down in order to see all the choices
