Loving Aldiko and fbReader on my Tab.
@OP, both are adjustable in ways you are asking for as I recall. For me, I simply use old school black background and optic green text. Both apps above let me control brightness of screen, and fbreader does have left hand swipe to control this, at least on my Tab.
