See, eInk basically consists of tiny transparent capsules filled with black and white pigments. By pulling different qualities of either to the top of the capsule various shades of gray are produced. This would not work if it were translucent, since then you would just see all the pigment at once.
That image is very nifty. I never really looked into the how of eInk.
