These are conversion Profiles and not ALWAYS limited to a specific device.
Note the input profile: You may not HAVE a brand X, but you bought books from the brand X store that were custom configured for that device. For a great conversion, those customizations need to be negated first.
Kovid seems to have thought it out well. You can have a 'default' (preferences), but still override those for an individual book. No YoYo settings in Preferences with this scheme
